With takeaway food not really an option during the lockdown, making healthy but tasty meals every day is a challenge. Here are some easy egg recipes you can try for breakfast or even as part of your main course.

Savoury Muffins

This muffin version of your favourite store-bought quiche (an open-faced pastry made with a savoury filling) is easy to make and can be had for breakfast or as a filling snack or as a meal paired with a tangy vinaigrette salad. You can have it hot or cold.

Serves: 6

How to: In a medium sized non-stick pan, add 1 tablespoonful of melted butter/olive oil. To it, add 2 cups of chopped spinach and half a cup of sliced mushrooms and a dash of salt and pepper. Sauté until the leaves wilt. Remove the pan from the heat and strain the mixture. Line a 6-cup muffin pan with baking cups and brush them with olive oil or butter.

In a bowl, whisk 6 eggs, half a cup of cheese of your choice, 1 small finely chopped onion, and the spinach-mushroom mixture. Pour it in the muffin cups. Bake at 180 °C for about 20 minutes. If you gently insert a knife into the muffins and it comes out clean, it means they are ready. Serve them warm with ketchup. This can also be done in a rectangular baking dish.

Potato Pancakes

Potatoes are packed with essential nutrients such as Vitamin B6, iron, phosphorus, magnesium and zinc. So, instead of the plain white flour pancake, whip up this healthy and tasty potato version of pancake that your family will love.

Serves: 6

How to: Peel and wash four medium-sized potatoes and grate them. In a bowl, add the grated potatoes, 1 small chopped onion, 1 egg, dried herbs or pizza seasoning, salt and pepper as per taste. Heat some olive oil in a non-stick pan over medium flame. Pour the batter in batches and cook for about 2 minutes. Then flip to cook the other side. Garnish with grated cheese and serve hot.

Baked Tomato Eggs

Who doesn’t like a baked dish? And since there’s no better way to begin your day than with wholesome eggs, this one’s a winner when it comes to both taste and health. While creamy eggs provide vitamins D, B12 and minerals such as selenium and phosphorus, fibre-rich tomatoes come packed with vitamins C and K.

Serves: 1

How to: Preheat the oven to 180 °C. In a bowl, mix 2 tablespoons of finely chopped blanched vegetables (beans, carrots, peas, broccoli, mushroom, sweet corn) of your choice with 2 tablespoons of homemade or readymade tomato-based sauce, such as arrabbiata, marinara or pizza-pasta sauce. Put this mixture in an oven-proof ramekin and spread it evenly.

Beat two eggs with some salt, pepper and dried herbs. Pour it over the tomato sauce-vegetable mixture and sprinkle some cheese on top. Bake it for about 10 minutes or until the eggs are set. Garnish with basil leaves and serve with garlic bread.
