Bread making is not as complicated as it seems. Try making these basic, fuss-free and yeast-free loaves at home that require no kneading at all. Enjoy them warm, straight from the oven.
Oats, Whole Wheat and Honey Bread
Rolled oats 1 cup + 1 tablespoon
Whole wheat flour 1 cup
Baking powder 2 teaspoons
Baking soda ½ teaspoon
Milk 1 ½ tablespoons
Salt ½ teaspoon
Vegetable oil 1 tablespoon
Honey 1 ½ tablespoons
Preheat the oven to 230 degrees Celsius. In a mixer-grinder, grind 1 cup of oatmeal. In a large mixing bowl, combine the ground oatmeal, baking powder, baking soda and salt. In another bowl, whisk together honey, milk and oil until well combined. Pour this into the oatmeal mixture and gently fold it together to form a dough ball.
Place the dough on an oiled baking sheet. Sprinkle 1 tablespoon of oats on top of the bread, gently pressing it in, and let it bake in the oven for about 25 minutes. Let it cool down for a few minutes. Slice and serve or make fresh sandwiches.
Mixed-seed Almond Flour Bread
Flaxseeds 3 tablespoons
White sesame seeds 3 tablespoons
Unsalted sunflower seeds ¼ cup
Unsalted pumpkin seeds ¼ cup
Almond flour2 cups
Baking soda ½ teaspoon
Baking powder 1 tablespoon
Salt ¼ teaspoon
Chia seeds 1 tablespoon
Honey 1 tablespoon
Buttermilk 1 cup
Olive oil ¼ cup
Preheat the oven to 175 degrees C. Grease the loaf pan with oil, then place a parchment paper.
To make the seed mix, combine flaxseeds, sesame seeds, sunflower seeds and pumpkin seeds and dry roast them in a small non-stick pan on medium heat, make sure you constantly stir them. Roast them for about 5 minutes until they turn golden brown.
Keep 2 tablespoons of the seed mixture aside in a small bowl. In a large mixing bowl, take the rest of the seed mix. To it, add almond flour, baking soda, baking powder and salt and whisk them well.
In a medium-sized bowl, crack the eggs and add oil, buttermilk, chia seeds and honey and whisk. Add the egg mixture to the dry ingredients and mix until well combined. Place the batter onto the prepared loaf pan and sprinkle the remaining seeds mix over it. Let it stand for 10 minutes. Bake the loaf in the oven for about 40 minutes until golden brown (insert a toothpick and it should come out clean). Let the bread cool down in the pan before you slice it.
